Add the water and honey to a saucepan
Scrape the seeds from the vanilla pods and add it to the honey mixture
Heat the mixture on the stove until just boiling
Take off the heat, add the gelatin and start beating with a mixer until it forms stiff peaks. This will take some time.
Once it is stiff enough to form peaks, spoon into silicon molds and leave to cool
Once cool, refrigerate
If your mixture cools down too quickly, it may separate
