Healthy Baby Marrow & Banana Muffins

Ingredients

  • 1 baby marrow grated
  • 1/2 cup yoghurt
  • 2 teaspoons vanilla essence
  • 1 egg
  • 1/3 cup oil
  • 4 tablespoons honey
  • 1/3 cup milk
  • 1 banana mashed
  • 1/2 cup chocolate chips (optional)
  • 1 1/2 cups wholemeal flour
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 pinch salt

Instructions

  1. Preheat your oven to 160C

  2. Grate the baby marrow and squeeze the liquid out

  3. Mash the banana

  4. In a bowl add yoghurt, vanilla essence, egg, oil, honey, milk, grated zucchini & mashed banana. Stir until combined

  5. In another bowl add the flour, baking powder, bicarbonate of soda and salt & chocolate chips if using them. Stir until combined.

  6. Add the wet ingredients to the dry ingredients and mix with a spoon or fork until combined.

  7. Pour into cupcake cases or a tin and bake for about 20 - 30 minutes, until golden.
